At the helm of Crystal Dragon is Chef de Cuisine Chan Choo Kean, a seasoned chef whose three decades of expertise blend Chinese culinary influences with elegant creativity.
Under his leadership, Crystal Dragon continues to be celebrated for authentic premium Cantonese and regional Chinese specialties, earning recognition from prestigious dining and travel awards through the years.
Recognition
Crystal Dragon has attained distinctions including Philippines’ Best Hotel Restaurant at the 2024 World Culinary Awards and continued recognition in the annual Tatler Best Philippines Guide.
Career Journey
Chef Chan’s culinary career grew in Kuala Lumpur, where he began as a barbecue chef before advancing through leading hotel and restaurant kitchens in Malaysia.
Started as a barbecue chef at Pear Point Seafood Restaurant in 1994, then continued at Villa Raya Restaurant from 1995 to 2000.
Assisted chefs in daily preparation, banqueting, events, and menu implementation.
Rejoined Villa Raya Restaurant as Chinese Master Chef, further honed his craft at Sunway Resort Hotel and Spa, and later served as Executive Chinese Master Chef at Asian Kitchen (M) Sdn Bhd, Menara Kuala Lumpur.
Became Chef de Cuisine (Chinese) at One World Hotel before joining City of Dreams Manila in 2015 as Crystal Dragon’s Chef de Cuisine.
